Banana Muffins

We made some banana muffins with oats and chocolate chips on this snowy day. šŸŒĀ 

I love to bake! šŸ§ Over the last couple years, though, I stopped baking as much with all the allergies. I guess I didnā€™t really see a point to it when I couldnā€™t share what I made with my favorite little guy. šŸ¤·šŸ½ā€ā™€ļø Now, though, there are so many great recipes out there that can accommodate Musaā€™s allergens that it doesnā€™t seem quite so impossible to bake with him. And like most little kids, he loves to help out in the kitchenā€¦and sneak in little fistfuls of chocolate chips in his mouth when Iā€™m not looking. šŸ‘€Ā 

We used Bob Red Millā€™s muffin mix. I use 1/3 of the mix at a time which makes 6 muffins. I add 1 single serving cup of applesauce as an egg replacer and then 1/3 of each other ingredient the mix calls for along with adding a banana, cinnamon, Enjoy Life Chocolate Chips and Bob Red Millā€™s Steel Cut Oats. Baked them at 400 degrees for 20 minutes which was way longer than Musa had the patience to wait for. ā° All in all, they turned out great and Musa now wants to add bananas into his cupcakes, donuts and everything else!
