Banana Muffins
We made some banana muffins with oats and chocolate chips on this snowy day. šĀ
I love to bake! š§ Over the last couple years, though, I stopped baking as much with all the allergies. I guess I didnāt really see a point to it when I couldnāt share what I made with my favorite little guy. š¤·š½āāļø Now, though, there are so many great recipes out there that can accommodate Musaās allergens that it doesnāt seem quite so impossible to bake with him. And like most little kids, he loves to help out in the kitchenā¦and sneak in little fistfuls of chocolate chips in his mouth when Iām not looking. šĀ
We used Bob Red Millās muffin mix. I use 1/3 of the mix at a time which makes 6 muffins. I add 1 single serving cup of applesauce as an egg replacer and then 1/3 of each other ingredient the mix calls for along with adding a banana, cinnamon, Enjoy Life Chocolate Chips and Bob Red Millās Steel Cut Oats. Baked them at 400 degrees for 20 minutes which was way longer than Musa had the patience to wait for. ā° All in all, they turned out great and Musa now wants to add bananas into his cupcakes, donuts and everything else!
