Pancakes- Healthy & Filling
Breakfast is Musa’s favorite meal of the day and he always asks for pancakes! We use the Bob Redmill Gluten Free Pancake mix or Enjoy Life’s pancake and waffle mix. The nice thing about Enjoy Life is that it has 5g of protein with each serving so I know Musa is full. Regardless, I always add flax seed to the mix to give him some extra omega-3 and fiber. In the Bob Redmill mix I also add in some oats- quick or steel cut both work- to make the pancakes more filling. After that, you can mix up the pancakes however you like. Musa’s fave is chocolate chip banana pancakes.
Chocolate Chip Banana Pancakes: – 1/2 cup of Bob Redmill or Enjoy Life mix – 1/4 cup of Soy Milk (or your choice of milk alternative) – 1/2 banana, mashed – 1 tsp cinnamon – Enjoy Life chocolate chips (as many as you’d like) *We mix all of these together and then use our Dash electric pancake maker to make 3-4 pancakes. Musa only ever eats one at a time so we stick the rest of the mix in the fridge to use later.
