Stir Fried Noodles
Musa has been asking why he has allergies and not his cousins or friends. This is the toughest question to answer and thankfully a simple answer or diversion does the trick. This has really got me thinking about what foods I can make that we can enjoy as a family. Typically, Musa likes his rice entrees but now that he’s a bit older and more curious to try new foods I’m trying to find things we can all enjoy together…so first up (and easiest to make for everyone) is stir fried noodles. 🍜
This is a great way to sneak in plenty of veggies- Musa’s favorites are carrots, peas, zucchini and sometimes broccoli. I use a mix of frozen and fresh veggies that I have on hand. Last night we used spaghetti or ‘slurp noodles’ as Musa likes to call them. I used the Barilla gluten free noodles for all of us. The only downside of gluten free noodles is that they are very dry the next day when reheating. So, I reheat on the stove with a little added oil which usually does the trick.
Stir Fried Noodles:
Ingredients:
- 1/2 pack of Barilla Gluten Free noodles
- 1/4 cup canola oil
- 2 chicken breasts, cut into small pieces
- 2 cloves garlic, chopped
- 2 tsp ginger, chopped
- 1 zucchini, chopped
- 1/2 green onion chopped
- 1/2 bag of mixed frozen vegetables
- 1/4 cup of soy sauce
- Salt & Pepper, to taste
Method:
- Set the noodles to boil.
- In a pan, heat up oil and add ginger and garlic.
- After a minute, add chicken and cook until almost done.
- Add zucchini, green onion, mix vegetables and let it all cook for 5 minutes.
- Add a pinch of salt, black pepper and soy sauce.
- After a minute add in the noodles, mix and you’re done!
